The ingredients needed to cook Veg Dirty Rice:

  1. Get 500 gms of rice.
  2. You need 100 grams of soya chunks.
  3. Prepare 250 gms of potatoes.
  4. Use 1/2 cup of baked beans.
  5. Get 2 of onions sliced.
  6. Take 2 tbsp of ginger garlic paste.
  7. Take 1 tbsp of coriander powder.
  8. Provide 1 tsp of chilli powder.
  9. Use 2 of Green cardamoms.
  10. Get 2 of cloves.
  11. Prepare 1 of small cinnamon.
  12. Provide 1 cup of oil.
  13. Get 1 of tomato sliced.
  14. You need 1 tsp of coriander chopped.

Instructions to make Veg Dirty Rice:

  1. Wash rice and soak for 30 mins. Then boil the rice along with the cardamom, cloves and cinnamon, and 3 tsp salt. Drain off excess water and keep aside..
  2. In a separate pot heat oil and deep fry the diced potatoes with a little saffron colour and salt and keep aside..
  3. Reduce oil to 2tbsp and fry the sliced onions till golden brown, add the sliced tomatoes and fry, then add the ginger-garlic paste, cook for 2 mins. Add salt, coriander powder, chilli powder and mix well. Add a little water and cook till the oil leaves sides.
  4. Add the soya chunks to it and fry, add baked beans and mix. Then add 2 cups water and cook till the soya is soft and water is reduced then add the boiled rice and fried potatoes to it. Mix well and dirty rice is ready..
  5. Garnish with some chopped coriander and serve hot..
